From what I understand, the enzymes breakdown the biofilm which the yeast hides in. Dissolving the biofilm allows antifungals and the immune system to attack the yeast directly. I would not worry to much about the tiny amount of Sugar that might be released in the process. Read more about digestive enzymes (not produced by humans) and yeast here:
