My glucose numbers would shoot up in to the 200s after a meal and then drop down into the 50s 2-3 hours later. When that occurred I would feel like I was going to die, and sometimes would blackout. It was frightening, and by far the worst feeling I have ever experienced (and I have passed kidney stones, had severe gout etc...)
My glucose numbers now are always between 68-70, no matter when or how much I eat because my diet is comprised of so much fat and only about 1-2 grams of carbs from the eggs I eat. My glucose doesn't change much and my insulin stays at baseline levels.
