I only get the heart pounding when eating foods that are high in fat / protein. I've been taking a little more and it's really helped. Still get pretty tired after eating most meats. I believe the heart pounding has something to do with digestion and either not producing enough stomach acid, bile, or some other digestive enzyme.

Today was my day at the nutritional specialist and he's officially diagnosed me with Hashimoto's due to my last thyroid tests and peroxidase levels. He's starting me on blood tests to check my inflammation response, leaky gut, and full thyroid panel. They will be taking lots of my blood by the looks of all these tests he wants done. I had another doctor tell me she suspected some mild auto-immune but this specialist I saw told me I could have been more accurately diagnosed and put on GAPS / Auto-immune version of Paleo. My adrenals are also going to get tested again as well. It's a lot to think about. I can never eat wheat again.

MTHFR is something related to how you process folate?

Los Vascos! I traveled to outside of Donostia two years ago. I bet it's an expensive place to live. Really enjoyed the people and food. I will be traveling more to the Catalans later this year for work. I really love the people there. So genuine!
