Looking for advice- fatigue, digestive issues

I've been sick for about 5 months and am looking for some new advice or ideas. It started with nausea, shaking/chills, heartburn and no appetite. Kind of felt like i was coming down with the flu or food poising. After a couple weeks of this and not eating enough I landed in the ER probably dehydrated and very nauseated. I was given nausea and heartburn meds. Since then have had other symptoms come and go, and have seen several different doctors and specialists.

Symptoms include:
Digestion issues
Nausea
Fatigue/Low Energy/Stress
Chemical sensitivity
Rash on stomach
Headache, lightheaded, dizzy
Diarrhea/Constipation
Bloated
Heartburn
Brain Fog
Stomach Cramps
Little to no appetite
Anxiety/Mood Swings
Increased Heart Rate
Shaking/Shivers
Unintended weight loss of 20 lbs
Blood Sugar issues

One early on diagnosed leaky gut. I've since removed gluten from my diet. I am working with a nutritional therapist, and have recently started acupuncture. I have completely changed my diet. I was eating a vegan diet for over a year. I've recently added back in eggs and animal protein. I'm avoiding gluten, soy, sugar, caffeine, corn, and dairy. I think this change has slightly helped my digestion symptoms but not completely.

Early blood work showed very low Vit D and B12, which have since been brought back to normal with daily supplements.

I've had tests for parasites, h pylori, celiac - all negative but they were also only one test and I know sometimes these are not conclusive.

Near the start of this I switched brands of birth control pills, but a visit to the gynecologist revealed nothing causing an issue there. Regardless I switched back for a few months but have now stopped taking it all together which brought on new symptoms of mood problems, headaches, and hormonal swings.

I am currently taking several supplements including - Fish oil, Vit D, Vit B-12, Iron, Probiotic, amino acids, digestive enzymes with meals, etc.

Next step is getting allergy tested for molds and foods.
I have had blood and stool tests, but no GI tests (endoscopy) has been done yet. I was told by one GI Dr. that might be needed to check for ulcers and celiac.
I was also told it could be still a bacterial or candida/yeast type of infection going on.

I think I am not absorbing nutrients correctly because I am fatigued almost all the time. I have developed a strong sensitivity to fragrances and chemical smells which causes lightheadedness and nausea. I also have noticed shaking/nausea/dizziness possibly related to blood Sugar issues.

Would appreciate advice or direction.
