For a healthy individual, I do not see an issue with ascorbic acid or sodium ascorbate usage.
I made sure to read an article that was critical of ascorbic acid use. I've noted on my container of sodium ascorbate:
Contributes to a deficiency in copper
Leeches Calcium and magnesium
Oxidizes in the presence of Iron, chromium and manganese
Current RDA upper daily intake limit is set at 2000 mg.
Most of our diets are high in copper and calcium, and low in magnesium. I do not know about the business with potassium, except that the sodium ascorbate contains 110 mg of sodium per gram of the product. It is important to aim for a 4:1 ratio of sodium to potassium and not higher, like the classic of even up to 15:1 in the typical american diet.
