I've been going thru the exact same thing. What I've learned is that (if you're an undermethylator) - folate and B12 will increase your histamine load- even the quantity in a multivitamin. Also, if you take sam-e (methionine) to assist methylation, it can build up in your system - which can also cause anxiety feelings. I take sam-e for undermethylation and my Dr. told me to take folate to control homocysteine levels with the sam-e - which led me into the worst allergies of my life. I stopped the folate and the allergies have abated- but still had anxiety b/c of sam-e build up.

Also, depending on how much zinc you take, you need to balance it out with manganese (not magnesium) - as you could become depleted and it will mess with your hormones big time.

Also, be aware that if you become copper deficient (just like bio-unavailable) - you can have low estrogen issues and excess histamine, as well as reduced immunity. Have you ever had your red blood cell copper and zinc tested?

I have pyroluria (with resulting severe copper toxicity), I'm an undermethylator, and I have adrenal fatigue - so I've learned the hard way about all of this:)
