I'm no expert so please take what I say with a big grain of salt. I've read in several resources that fasting beyond 40 days is dangerous. Aside from that good luck and I think you're plan for breaking the fast is excellent and probably the most important part of what you're doing if you're goal is weight loss.
The only other thing I'll say is no matter how you break the fast you WILL gain some weight back(maybe as much as 20-30lbs) so when the time comes don't run from the scale I would way yourself everyday until you're weight levels out then go from there otherwise you'll probably go eat out of frustration and mess up all your hard work.
