the normal color of urine whilst not fasting is a light yellow, but this depends on other factors such as diet or any drugs taken or health issues.
Amber urine can be normal as well just concentrated.
Deep yellow can be caused by an excess of riboflavin (Vitamin B2) or even dehydration. There are many variables.
Yes, you can overburden the kidneys outside of fasting by drinking too much water, much the same way as eating too much food produces excess weight or excess air can cause hyperventilation.
In other words, avoid anything to excess, and that includes any healthful excesses.
The need for fluids is dictated by the diet and activity, which if of a high-water-content and nutrient dense, negates the need for extra water. Sweating thru exercise will also demand extra water.
Processed foods create a greater demand for water because they lack this fluid and where salt-taking results in the same.
The most reliable thing to do is listen to your body as to what it is telling you, such as in the need for sleep or rest or food thru hunger.
The body is much wiser than conscious reasoning or the intellect.
