I am drinking mostly whey at the moment because I do have some dairy issues with kefir despite fermenting it for the correct amount of time. I am still at the experimental stage with kefir.
Making whey means I have a surplus of cheese/cream! I pressed the cream cheese to make mature cheese and followed the instructions on Dom's site. The result wasn't great so I cut the pressed cheese up into little pieces and made feta cheese (also described by Dom). You preserve the feta in a jar of salted water/whey. This tastes very good already and will keep for a long time I guess.
