I agree with you concerning raw milk.
But I make goat milk kefir, because I don't go well with cow milk, sort of nausea... But it's hard to find, so I have to use pasteurised UHT milk (yes, it's the worst one)... Sometimes I can have raw goat milk, but not very often due to lack of shops. I have to find people who have goats, and they are not a lot here.
Anyway, do you agree with the fact that lactose turns into galactose after fermentation? If so, that means there's still Sugar in it?
