It depends on:
- how many calories you ate on your break
- how long your fasting periods are
- how long your whole plan is
- your personal body's reaction to fasting
Your body starts to reduce the metabolism in about 3 days.
It takes 6-8 weeks for a full metabolism change to drop to nothing unless you have health issues or your body has adapted to fasting and drops the metab more quickly than a newbie.
If you are worried about gaining weight back just break your fast with 500 calories of juice. Stay at that with some water until your weight drops again. Everytime your weight drops add 200 calories. Usually this works out to be every week or two. Get your body up to 1200 calories with a mix of whole food/juices and stay on that until you find your body leveling out. What I mean by that is you will know your body is relaxed because there will be less bloating, your skin gets tighter again, you get a super burst of energy and just look restored like a newborn baby. ☺
From that point add 200 calories just like you did before while watching the scale. I suggest to use a measuring tape or clothing as your guide. In restoration mode you may put on muscle more easily than you have before. I have see that a lot in the friends I have helped fast and myself.
You can also do weight training while increasing your calories. This will make the extra cals go to building healthy strong tissue instead of just fat.
This is what I do plus the mixing it up like you suggested. I never gained back anything but the 5 lbs of water. Used to be 10 at my higher weights. I think that was from a bad salt habit I kicked though.
When not fasting my diet did not include overeating once my metab was restored to the avged cal count need formula for metabolism. I would like to say it was all pure food but it was not. I did a test on myself and I can tell you...fake food makes you fat. All calories are NOT created equal.
Whatever path you choose the metabolism is flexable.You just have to know what to do with it. ☺
