I loved apples too after my first fast! I know Fuji, but have you tried Cripps Pink or Pink Lady? They are actually the same apple, but they are sorted into two divisions, Pink Lady being the sweetest and reddest. I actually prefer the Cripps version, but they are both almost equally heavenly.

The other one is a Braeburn. Less sweet but full in flavour, soooo delicious. If I had to eat one food for all eternity it would be a Cripps Pink. Tweet
