Fascinating! Thanks for the great info. I'll keep it in mind next time I get out my juicer for a run of juices. (I have a huge Champion juicer so I tend to atke it out, leave it out, and juice like crazy for a couple weeks.)
Are Carrots on the list of high G.I.? I do have a problem with glycemic foods and instinctively shied away from juicing too many fruits. Figured no one gets enough veggies so stuck with those. Someone also told me that they were renal-toxic (bad for kidneys) in high doses but I haven't been able to confirm that. All I found was a list of symptoms for Vit A overdose, which is nto pleasant.
