Sky, you gave up smoking, I would guess that's probably a lot do do with it. People do put on weight when they give up smoking. What ever you do, don't go back to smoking. Do another fast if you need to, but don't smoke!
I gave up smoking after acupuncture in the 1990s, and put on weight. Now of course I am not addicted to smoking, however there is always the temptation to eat too much at the end of a fast, I called it from fasting to feasting, after my 2nd fast, I put on nearly 20 pounds. However, I was still less than what I was before it. Now you haven't actually said you are putting on huge amounts of weight, is this a problem? Everyone puts on some weight at the end of a fast. It's sooo easy to lose weight with fasting, so my advice would be try to control the weight IF this is a problem, maybe by studying

However if you are not putting on weight to the extent that you weigh more now than you did before the start of your fast, then I am not sure I would worry too much, I expect your body is just stocking up with all the good stuff you have deprived it of for years. And even if you did put on weight overall, well, smoking is far more deadly than putting on a few pounds, so I would suggest you fix it by fasting.
Maybe after a few fasts, and a longer time not smoking, the healthy balance would return.
