As you know, there is good cholesterol and bad cholesterol. Your body actually NEEDS cholesterol or will start making it's own out of carrot sticks, which would be the bad kind. The cholesterol in eggs, also comes with the lecithen to break it down, and will provide GOOD cholesterol for your body. Don't go hog wild on them, though, variety is where health is. Vegans do not eat eggs, but many vegetarians do. If you do, do buy the free range kind, fed a vegetarian diet. This information came from the book Let Get Well, written by Adelle Davis, who was the nation's leading nutritionist, years ago. She was not vegetarian, but I do believe her info on foods, whether or not I desire to eat animal products.
