Assuming eating "healthy" means eating only fruits, nuts, seeds, and herbs in their raw, natural form, then this is the only appropriate diet of the human species. Conscious fasting - being aware of one's body at all times - is the single most effective method of clearing accumulated waste from the body. Fasting coupled with correct eating is no vice, it is intelligent, intuitive, and a self-aware method of perfecting the human organism.
Those who inform you that you are "extreme" or perhaps even obsessed with health/purity/perfection are those who dwell far below you on the ladder of spiritual evolution; those who, for instance, might eat truly repulsive foods once a week or month (or perhaps even fried or grilled pseudo-foods daily), and then attempt to justify their foolish actions by suggesting that we all need to "let our hair down once in a while" - or a similarly self-destructive statement.
A vice is a weakness, a form of sin, or total lack of self-control - seeking to purify and further one's body, mind and spirit is exactly what we are here to do...and this is no sin!
Pay no heed to the comments of others, Katie, for only you are apt to form opinions on your own diet, your own beliefs, your own goals and desires.
"Where is the freedom in eating perfectly 24/7?"
Choice is freedom. You can choose to eat to live, to sustain your physical body as well you can, while you are here.
With the exception of the cacao incident (made-for-TV movie coming your way around 2012), yes.
"If so, do you ever just want junk? When I say jumk, I do mean junk."
No. Why would I?
"Unless I can get to the point where I simply have NO desire for junk. Is that possible?"
Of course! Is this not what you are aiming for? Cravings/desires exist only because the "food" is in (leaving) your blood stream, or due to an emotional attachment of some kind.
I read that you are partaking in no-coffee cleanses and suchlike. Concentrating on what you should be eating is far easier than concentrating on what you should not! If you tell yourself that all you eat from this day forth is raw vegan produce, then that is that! Coffee, sugar, salt, crisps, burgers and similar filth do not conform, and thus they are rendered obsolete.
Perhaps this may seem odd, but I have felt physically ill while watching my parents eating. By observing everyone around me I witnessed exactly that which I loathed; gluttony, ignorance, dependence on nothing-products, etc, etc., and then my own great change was impossible to resist.
Hm, how about standing outside starbucks and watching those inside eat and drink their poisons? It should not take long for you to turn away in disgust and return home to your green salad and distilled water! (With a wide smile upon your face!)
"Anyway, the idea of the last day of your life is that of living in state of innocence, with presence here now and authenticity."
And the idea of this day...of every day. Innocence, open-mindedness, integrity, awareness, AWE. None of these delightful characteristics can be developed or maintained through self-poisoning.
My idea (or belief) is that we are all approaching perfection with each passing moment, and must work towards this as well we can. Auto-intoxication, no matter how one attempts to justify it, is not conducive to one's awakening - heightened awareness.
All through the Ancient world are texts dictating the ascent of the spirit from the human body and into the next stage of existence. I believe that we should prepare ourselves as much as possible for this eventuality, and this preparation begins with the very foods we choose to consume (a concept mirrored by the Ancient Mystery Schools who only admitted students after proving they could fast for forty-days, and consequently followed a diet of only raw, vegan foods).
