Do you have time to prepare foods the night before? If yes, perhaps you could make something similar to a tabooli. Use varying grains... boiled as a different base for your leafless salads. Mix cut veggies, use OO,
Sea Salt , and spices/lemon for taste. You could prepare this the evening (or two) before and keep it in the fridge overnight.
I found a great recipe site and posted it the other day in the vegetarian forum. The site allows you to search by term, and also allows you to search by exclusion. By typing in the word vegetarian, I got only two hits because it was looking for recipes with that as a part of the name. However, when I didn't use a search term, just chose those items I wished to exclude, I got lots and lots of recipes. Since breads bother you, you would probably want to exclude yeast, gluten, and wheat products. There are lots of other categories as well. I am sure some of these recipes would be great prepared ahead of time. If interested and you want to check it out:
