Success so far - continuing in the transformation.

I am not the best at follow-through… at least on paper. I have to admit that I am proud of myself and the action I have taken on behalf of my health. It has been close to 3 months since I began this phase of my transformation and I have been reaping the benefits of a healthier lifestyle. I have lost 60 lb to date, I enjoy a smooth complexion, my skin problems have all but disappeared, my fatigue, headaches, joint pain, muddy-headedness, etc. have all gone away. I have gradually intensified my health practices to include a 3 mile walk every morning, which I plan to double in the near future, though I have to admit that this is not entirely for my health. I began walking to work during the gas price hike after Hurricane Katrina and continue with this practice 5 days a week because I have come to enjoy it. I feel good knowing that by walking to work I am benefiting myself, my community, and my world.
In my diet I have tried to incorporate raw foods as much as possible. I have always known that eating fresh fruits and vegetables was healthy, but I never knew why. I have been reading extensively on the benefits of eating foods that are still “alive” – though I get a really strange look from my family members when I say it like that. I have also reduced my dairy and cut out homogenized oils… which means no cheese and no salad dressing! These two things have been so hard to live without! I eat a salad almost every day, and used to love lots of cheddar and bleu cheese, with ranch style dressing on top… I have been surviving on lemon juice, tomato slices, and vinegar with sea salt and pepper… but it’s just not the same. I allow myself cheese only if it is imported (since most other countries don’t medicate their cattle like Americans do). I’ve also tried to be very aware of the meats I’m eating and even though I know some of them contain hormones and antibiotics, free-range is very hard to come by in this area (and VERY expensive when you can find it). So until I can procure a better source for those meats, I have just reduced my intake and now buy more wild seafood products.
So far I have been very happy with my progress and I am slowly making adjustments to my diet and activity level. I may not check in often, but I will keep my information updated every couple of months on my progress.
