I am on the phone with Lynn Gordon,
the absolutely best Heart and Soul inspired
breadmaker in America.

She bakes her breads in Minnesota
where the whole community gravitates around
her lovely restaurant and bake shop.

Her breads are highly regarded throughout
the health conscious community,
and Macrobiotic Chefs who
have very high standards.

Lynn is an incredibly loving
and self loving woman. Her care for people
shows through every loaf of bread.

She is advising me to ask Chef Hermann Schaefer
of the Hilton San Diego Resort to include
her Fat Flush Tortilla's in the "Enchanted Gardener's Lunches"
August 5-6-7 at "Organic Celebration at the Hilton!"

These will make wonderful quesadillas she tells me.

The three days of lunches are part of the International
Feng Shui Conference...

What is the connection between feng shui
and good foods? How do you get your energy going and flowing
and moving without the best of foods,
Who, among the bread eaters of the world,
would not like the finest bread possible
that flushes fat while you eat?????

I know what it is to have a love affair with bread!
believe me, I do. i know what it is like to feel a warm
soothing, yummy bread slice slip into the mouth
with a buttery topping.

The eyes roll back and I say,
"Oh God, Oh God!! reminescent of other
body pleasures!

Bread, called the Staff of Life,
is certainly less a difficult relationship to handle
that a human partner! As far as cultivating your
bread relationship, Lynn's tortillas

and all the breads from French Meadow
are my breads of choice.

One of my beef"s is with the use of
bread in the Jewish community.
They have this weekly ritual that includes
white flour wheat bread, often preservative ridden
and then they say a prayer over it.

where Blessings are spoken.
They are worthy of Blessings
and are a Blessing to eat!!!

breads without Yeast? Why?

Without the use of baker's yeast, dough may take eight or ten times as long to rise, but you might agree with us that the wait is worth it. Why, then, do we leave the yeast out of our bread?  It is healthier - not only for the large number of people who are allergic to yeast, but for all of us.  One significant health advantage to yeast-free bread is its value to digestion.  While yeasted breads create, over time, an imbalance in our intestinal flora, yeast-free breads help to preserve that balance.   And, as it contains strains of lactobacillus - an organism important for the proper digestion of complex carbohydrates - yeast-free bread is easier for our stomachs to break down and utilize. 

If there are health benefits to yeast-free bread, then why not simply leave out the leavening process altogether?  The answer is that the natural leavening process itself is beneficial for our bodies.  Wheat grain contains phytic acid, a substance that has been linked to anemia, rickets, and nervous disorders. When bread is leavened naturally, 100% of the phytic acid is eliminated.  If, on the other hand, bread is leavened with the help of baker's yeast, only 10% of the acid is removed.
