Cranberry Orange Walnut Frozen Pudding Dessert A dairy-free ice cream substitute Ingredients 1-2/3 Cup Water 20 Dates, pitted, dried 1/3 cup Oatmeal 12 oz. package Cranberries, fresh whole 12-oz Orange Juice, frozen concentrate 1 tsp. Guar Gum, powdered 1/2 tsp. Cinnamon 1/4 tsp. Stevia Extract, white powder 1 cup Walnuts, shelled

Preparation:

Cook the Oatmeal in 2/3 of a cup of the water. Place the cooked oatmeal and all the other ingredients, except the Walnuts, in the container of a High Powered Blender (Vita-Mix type) in the order listed above. Install the cover and insert the "tamper/mixing stick" (make sure it's the one supplied by the manufacturer, and that it cannot reach the blades). Start the blender at slow speed and quickly increase to the highest speed, in stages. Assist the mixing as necessary with the "tamper/mixing stick". Remove the "stick" and allow the mixer to suck air into the vortex. Use the "tamper/mixing stick" again as needed to insure through blending. When the mixture has become very thick, stop the mixer.

Add the Walnuts and reinsert the "stick" and mix the nuts into the other blended ingredients. turn the Blender on Low speed and increase the speed slightly, if necessary, to help work the Walnut pieces uniformly into the mixture. Stop the Blender when the Walnut pieces are at the desired size (1/8 - 1/4").

Pour into 4-oz. plastic cups with lids (Dixie type), or into "ice-cream-on-a-stick" molds. Place in freezer. When solid, your treat is ready to enjoy. It's great for Thanksgiving
