Raw Vegan Chocolate Cake (its really raw carob, not raw chocolate, shhhh)
Grind up 1 cup of raw organic almonds (don’t soak them) in the blender on high for about one minute until they are a fine powder. (Best is the Vitamix blender, using the pummel to push the nuts down as you blend)
Keep grinding until they start to get a little doughy due to the oils being released
Add 2 tablespoons of raw carob powder
Add 1 and a half tablespoons of raw unfiltered honey
Continue to blend (and push with pummel if available) for one minute.
Use a spatula to remove from blender and roll mixture into balls or form into a piece of cake. Enjoy a little bit now, and a little bit later! It may be a bit warm from all the blending. That’s OK! Its not cooked if its under 105 degrees which it will be well under! This recipe can keep in the fridge for a week!
I swear to you this is the best chocolate cake I have ever ever ever tasted!!! I feel like a confectioner when I’m making this. Honestly, this is what cooked chocolate cake wishes it could taste like!
