The lion's share of my own "evolving nutritional awareness" can be most objectively be referenced (yet not exclusively) to Biodynamic Agriculture. My recognition of the right alignment that I have with the book Nourishing Traditions (by Sally Fallon) likewise includes eight references to Biodynamic Agriculture/foods. The Wise Traditions Journal that is published quarterly by The Weston A. Price Foundation not only includes a number of "wise food traditions" but those of farming as well.
In traditional agricultural-based societies what may now appear as possibly three separate arenas of food, nutrition, and agriculture were all closely knit together as a whole integral and practically applied wisdom. It is really only in very recent history that the these have been separated to the point where if you ask most urbanized children where their food comes from they will immediately tell you a particular grocery store. American society has mutated from a truly agricultural foundation to some kind of commercial variant.
However, it can be said there there has been a "remnant" of agri-culture that has been preserved over the ensuing decades that has continued to work with the forces of nature whereby society could recover (at least in part) a little closer connection with "a whole integral and practically applied wisdom" that preceding societies had once held sacred. Most fortunately Rudolf Steiner appeared at a most critical junction in the departure from these wise traditions and he delivered the course on Agriculture to a group of farmers who were well prepared to hear and apply the return of wisdom thus giving birth to Biodynamic Agriculture!
The Biodynamic Association of Northern California has adopted the following quote of Rudolf Steiner.
"Seek the truly practical, material life but seek in such a way that it does not numb you to the spirit that works within it.
Seek the spirit but not out of spiritual lust or spiritual egoism; seek it rather because you wish to become selfless in the practical life of the material world.
Keep to the ancient principle: 'Spirit never without matter, matter never without Spirit', in such a way as you say: We will do everything material in the light of spirit, and let us seek the light of the spirit in such a way that it enkindles warmth in us for our practical deeds."

The "Yin and Yang" of Spirit and Matter is possibly best exemplified in Biodynamic Agriculture.
Steiner's Agriculture lectures were given in 1924.

"The most important thing about food is not the substance of the food itself but the energetic matrix it offers us. The material substance is a vehicle and through it we must reach the quintessence to also nourish our subtle bodies. If we think we eat solely to feed our physical body, we are wrong: we also eat to nourish our heart, mind, soul and spirit."[1] (plus some minor edits I made 3-27-18)
Steiner also spoke to this. In reading the above quote of Omraam I realized the correspondence of the "quintessence(s)" in both food and in individuals. The quintessence of "energy" in food corresponds to spirit in the individual. Both energy and spirit share the fire element. In food it is the sun's energy that is transformed into chlorophyll. Human bodies are also composed of matter (substance) that "is only a medium" and "through it we must ... reach the quintessence" of spirit! However the medium itself (of both food and human bodies) needs to be well-nourished to be able to allow a greater degree of the "quintessence" into it. If one continues on their path of evolving nutritional awareness then it is inevitable that they will come to this "most important thing about food".

Beginning with respiration and nutrition, our life is nothing more than exchanges, made possible by our sense organs (touch, taste, smell, hearing and sight), which have been given to us by nature to allow exchanges with creation and its creatures. Our emotional and intellectual lives also consist of encounters and exchanges: by means of words, feelings and thoughts, we ceaselessly weave a network of relationships which is the foundation of family and social life. If human beings do not derive any great benefits from these exchanges, it is often because they do not rise above the level of instinct, of the unconscious as it exists in plants and animals. Like human beings, plants and animals breathe and nourish themselves. Animals also possess sense organs, sometimes even more highly developed than those of human beings, and they also have a family and social life. It is the responsibility of humans to make all their exchanges with nature and the other beings they encounter, more profound and richer. ..."[2]
IMO - "exchanges with nature" can be made "more profound and richer" with a direct relationship with agriculture and all the more so with Biodynamic or similar Agriculture where the farm strives to be a self-contained, individualized, living entity.

"... Optimal nutrition is more than a list of which vitamins are contained in which food. It involves reading the book of nature and getting an understanding of how minerals, plants, animals and humans interact."
