Where Chef Jem's food service career began and more!

My very first experience in food service was the Summer of 1965 in Southern Wisconsin (Kenosha County country just outside of Salem) at what use to be the "Union League Boys Club Camp".
This was where I started my food service "career" as a volunteer washing "pots and pans" in exchange for having the privilege of going to the "canteen" at night when the rest of the campers went to bed!
Then the very next Summer I got hired! Three Summers earlier as a camper I was so happy to go on "slop runs" sitting on back of a Ford pickup truck as we took "slop buckets" to a nearby farm to feed the pigs. I was in camper heaven!
I absolutely loved Wisconsin! God's country!
However, the war that the State of Wisconsin initiated against raw milk there has been a waste! The State's prime target: Vernon Hershberger was found not guilty by a jury on three of the four counts concerning his farm's raw milk production and the fact that he made that available to his farms private food club. Based on the three passes - the fourth count really should have been disregarded as well as it doesn't make sense to be found not liable for just three quarters of the charges in this particular case. Nevertheless Vernon is farming, the milk is flowing and his club members are enjoying raw milk (and all the many other raw dairy products)!
All of this comes to mind after just hearing of the recent passing of Ruth Zinneker who had the longest standing Biodynamic farm in the u.s. of A!:

I just wrote the following to the Biodynamic Association.:
"I think it was about three days after her crossing (or so) that all of a sudden I found myself thinking about her farm! (Although I do not have the
note at my finger tips I am certain that I did make note of that and had intended to look into the status of the farm. I know there was an issue
(or more) with the state back a few years ago and I wanted to follow-up on that especially in light of the predominant 'win' with the Grazin' Acres
Farm State of Wisconsin issue over raw milk sales there.)"
