I have been thinking that if would have been on vacation for 2 weeks when I was fasting during detox time, I might have made it past day 13. I am serious thinking about scheduling my next fast so that my vacation falls around the day 13 so I might get past the hardest part of a water fast. I can't remember how I did it last time I fasted in 2006.

Oh well. I have been focusing on healthy eating and reading what veggies are high in fiber so that I can still be cleaning out my system until I am ready to fast again. I really would love to fast until completion, but it is really up to what my body can handle.

I made list of veggies so when I went to the grocery store, I knew what to buy. A lot of them I can juice as well, if I want to.

I decided to buy some potatoes to bake, since they are high in fiber. But I promised myself "NO butter, NO sour cream and No salt". So I went on a quest to find out what is healthy that I could top my baked potato with. After reading suggestions of cheese, cheese and more cheese (along with cooked broccoli), I decided why can't I top it with a salad. So when I went to the grocery store, I bought fresh spinach, radishes, broccoli and some strawberries and blackberries. I also found some organic carrots and broccoli that was julienned, which was perfect for that I was looking for. I also found some fresh salsa that only had tomatoes, and other veggie ingredients with no perservatives (since it is freshly made - It is the best. I love it). I also bought one can of black beans.

When I got home I washed the 3 medium potatoes, with the idea of only eating one, but so I had two already cooked up. The only thing I did do is take a pastry brush and brush the skin of my potato with just a dab of oil so I could grind garlic pepper from my mill. I added just a touch of lemon pepper as well. It stuck well to the skin and I hoped that it would be crispy and tasty. I put it in my toaster oven to bake.

I then opened the can of black beans and put them in my strainer and rinsed them well of salt. I put them in a container so I could use them later too. I then took small bowl and put in just a small handful of the julienned carrot and broccoli. I also took a small already peeled carrot that I had and sliced it thin like the others. I did the same with the radishes, since I didn't want to use onions, I thought that radishes would give it that bit of bite I wanted. I took about 5 leaves of spinach and washed them good. I tore them up in small pieces. I put it in the refridgerator until my potatoes were done.

When my potatoes were done, they smelled so good. I cut and opened two and put the other one in the fridge for later. I then topped the potatoes with one spoonful of salsa. I placed the leafy greens on top, then another spoonful of salsa and a one spoonful of black beans. I did add a spoonful of basalmic vingrette for the greens.

I smelled delicious, but wondered how well it would taste with the veggies on top. I had never done that before. Maybe cooked broccoli, but never raw. I let it sit for a couple minutes as I looked at it. I wanted to take a picture of it because it was so beautiful, as well as healthy and full of fiber.

I decided to eat the smaller of the potatoes. I was quite surprised how wonderful it tasted. Even without butter,sour cream or salt! I have to say it was the best baked potato that I have ever had. The skin was even crispy and had a very pepper taste. I ate everything, even the skin, which is very good for you and high in fiber. I need to remember to chop the julienned veggies a bit smaller because they were so long. LOL I didn't eat the other potato, but wrapped it up in tinfoil for me to eat for lunch or dinner tomorrow.

I know that I will have something with black beans tomorrow for breakfast. Maybe just some julienned veggies.

I started drinking water since I am no longer afraid vomiting when I drink it.
