Always, when purchasing a restaurant you want to put a clause in the purchase, that the owner may not own a similar business within ten miles of the business he is leaving. Also, you will want to write a clause about the employees.
With any business you will want to see a current profit and loss of the business. Understanding that the statement could be false and not true. A good way to check on money flow of a business is to sit outside the business and watch who comes and leaves. After watching customer flow, you should be able to see if the statement was correct.
