KEEP The Beet here. It gives me a lot of joy to see that more and more
of us are gaining confidence that we can grow our own food. The word
is out...it really isn't that difficult. One of the simpliest ways to see food
growing before your eyes in about a week or less is to get the largest locally grown beet you can find--preferably from a local organic farmer. Making your own compost and give your left over veggies to worms. They will make worm castings. Put your compost and worm castings in your pot. For beginnings, I recommend a good potting soil mixture. I grow in Foxfarm Ocean and Forest Blend that we get at
our local City Farmers Nursery.

Take your newly adopted beet, the one you get from the farmer, and eat the greens, but KEEP The BEET. Repot your beet in this potting soil. Do not eat it. Your very own KEEP The BEET will keep growing more and more greens. You can eat the greens raw, streamed, or in various recipes. At home here in the Enchanted Garden Intentional Community is San Diego, California, Leslie has more than ten pots of beets. I do not mind sharing my pot with edible flowers, or other sprouts. During the second year, I put up a large stock and make hundreds of seeds. Then you can grow beets from seeds as well, and give your seeds to friends. I highly recommend that every body have at least one KEEP The BEET. One Pot+One Person=Your're a Gardener. I also want to see thousands and thousands of new seed growers.

SOL: What's it like being so famous? How do you keep your balance
with such a hectic schedule of traveling?

KEEP The BEET: During the summer season, I spend time in the garden catching up with my reading. I have been enjoying reading THE ULTIMATE GARDENER, a new book that came out in Spring '08. It gives me a chuckle seeing my name in print in that book that includes some of Your Enchanted Gardener Leslie's photos. Of course, I love Anastasia's books too, and I have been reading the articles in SPACE OF LOVE MAGAZINE. Although I like to travel and spread the word about growing your own food, I really enjoy my time in the summer garden time. It keeps me grounded. Summer is a time when we stay home more and work on The Great Earth Clean UP that starts right in our own back yard. We all have clean Up to do.

SOL: How did you learn to Talk?

KEEP The BEET: All plants talk. The question is: Are you hearing me? Learning to "Talk Beet" is a question of learning how to keep the beat with nature. For thousands of years, we have each had natural abilities. That is why everyone is so drawn to Anastasia. She never lost what we all inherently have. When you start KEEP The BEET in a pot, you will start to hear me! You will remember how to keep the beat with your own nature.

SOL: You mentioned the Enchanted Garden. What is that?

KEEP THE BEET: The Enchanted Garden is a name for our renewed earth
that grows one plant at a time, and one dream at a time. We sometimes forget that our Mother Earth is looking to each of us for her rebirth. We each have Seed Dreams that are meant to come down to earth. Growing our dream begins in our own backyard, so dig in!
