RAW SWEET POTATO SALAD
Shred an organic sweet potato, skin and all, with a shredder. Quickly add some orange or lemon juice so the potato doesn't darken. Add finely chopped celery and onions, parsley, raisins, walnuts, apples (and anything else you may like). Dress with fresh orange juice, olive or flax seed oil, a pinch of Celtic sea salt and mix well. Chew each bite slowly. You can use any dressing you like. You can't mess it up!
TAHINI DRESSING OR DIP
Grind a cup of sesame seeds....Add the fresh juice of an orange or lemon (thicker less juice; thinner more juice). Add herbs for a green salad or fruit for a fruit salad. Sky's the limit. Some of the things you can try: honey, dates, raisins, prunes, figs, lemon, garlic, chives, cayenne pepper, basil, parsley, rosemary or any flavors you like. Use your imagination.
NUTS OR SEED DRESSINGS OR DIPS
The extra calories will keep you warm in winter. Remember, they are all acidic. You can prepare the nuts -- almonds, walnuts, pine nuts, etc. -- first by soaking them in water overnight so they are more easily digested and absorbed. Then grind them up. [Sunflower seeds need only be soaked a few hours. Much longer than that and they get bitter very quickly. - M]
If you're making a dip, add less juice or water to your recipe. For a dressing use more. The secret with nuts is making sure they are fresh and grinding them smooth. If you're making a dessert, add fresh vanilla, coconut and any fresh organic fruit in season. In a dip for vegetables, add spices and different seasonings with a touch of your favorite herbs. Make up your own name for each dip and dressing!
