Kefir is defined as containing vitamin B12 does this apply to water Kefir/Kefir Duva or does this only apply to milk Kefir? From my own experience Kefir grains used in milk and then transferred to fruit juice is best avoided,when water Kefir grains are supplied ask the supplier to confirm they are water grains and not milk processed...milk Kefir is better staying with milk....I am currently experimenting with the first ’Kefir’ I bought (defined as Kefir duva,in fact milk kefir) in composting!

congratulations on wanting to make your kefir from natural kefir grains and not those commercial starters. : )
as to where to buy kefir grains, a lot of people are actually giving their kefir grains away, since everytime you make kefir from it, you actually ”grow” more kefir grains.
But if you can’t find someone who is willing to give you some, or are worried about the kefir grains quality or even their health in this site you can buy kefir grains.

I am fairly new to making kefir but this is what I do:
After letting the kefir sit for 24 hrs, I then take a clean fork and whisk it around in the kefir (I only make about 2 cups of kefir at a time). Then I pour some kefir into a bowl and fish out chunks of kefir grains with the fork, then dump the remaining kefir into a blender. I keep doing this until I’ve fished most of the kefir grains out. Now, this does leave some grains in the kefir, but I have read that it is good to eat some of the kefir grains, which I mix up in the blender with some fruit & such for a tasty smoothie. (I h ...

live grain kefir is much better than yogurt for Candida. but because you have leaky gut, i would suggest water kefir/coconut kefir/cabbage kefir as regular kefir which is raw milk derived can still contain lactose, but even the regular one will give you benefits.

Anyone know what the basic ingredients are to make Kefir water other than the actual water Kefir grains? I’m looking for the very basics without trying to make a special water Kefir drink or whatever. Is it just 4 tbls of sugar, 4 cups of Spring water and a 1/2 cup of water Kefir grains? Are those the basics in order to make Kefir water? What’s the best water to use?

Not all bacteria are good. There are good ones and there are bad ones. Just like when you eat medicines like antibiotic, which kills bacteria, there are probiotics like kefir and yogurt.
You want to stay away from bad bacteria because these can cause you a lot of pain. take for example salmonella. If you eat expired or contaminated food, you could end up in the hospital.
Just because it’s kefir doesn’t mean it doesn’t have bad bacteria in it. In reality, there are bad bacteria in kefir. It’s just that the good bacteria in kefir is a whole lot more.

The best probiotic there is is KEFIR. The great thing is that once you have the kefir grains, you just add milk each day, strain out the grains and you have a wonderful probiotic drink and then just add milk to the strained grains. You can get these grains free from the wonderful kefir community. Here’s a link:

Do these two offer different benefits?
If you are unable to obtain organic milk would it be better to use the water kefir?
Can you interchange the kefir grains, to make milk kefir from the grains used to make water kefir and vice versa?
I have 9 in my family, making enough milk kefir for everyone may be too much for me (financially), at least for daily consumption. Perhaps some days water kefir, some days milk kefir?

Dead, dead, dead is what you might end being. Deliberately leaving most store bought kefirs unrefrigerated could be a very dangerous practice. With exceptions, store bought kefir is NOT made from real kefir grains. Even when store bought kefir is fermented from real kefir grains, it is usually not fully fermented. There is usually plenty of sugar left in store bought kefir. You have no idea what pathogenic bacteria you might be incubating as an unwanted secondary fermentation. Today I started making my first batch of home-made Live Grain Kefir.

You should normally be culturing a new batch of kefir every 24 hours.
Very strong kefir will be extremely tart and sour and will have separated into layers of curds and whey, some of it chunky. The amount of lactic acid in kefir should allow it to remain untainted for up to a month in the fridge. Sometimes a non-pathogenic white mold called ’flower of kefir’ will grow on top of stored kefir. It is harmless and can be spooned off the top. I think that storebought kefir tastes more like thick yogurt (which I like by the way), whereas homemade kefir is more like slightly sour yogurt, and they do have slightly different texture. Storebought kefir is very homogenous (which seems to be unnatural to me).

1) You need kefir grains. You can probably find them at health food stores, if not you can find them online (like www.mercola.com).

IMO, most storebought ”kefir’ should not be called kefir. Real kefir grains are highly complex, balanced ecosystems containing over thirty beneficial micro-organisms. You can not use even real kefir as starter for additional batches of kefir, as you can with yogurt. Real kefir can only be brewed from the actual grains themselves. We drink Milk Kefir (not Water Kefir) everyday - actually mostly I make my Kefir from Soy Milk, periodically mixing with real milk.
So, if you milk intolerant - you can start on Fermented Soy Milk or any other Milk substitute such as Nut or Seed Milk.
However, Real Milk should be OK too - since Kefir Grains will Ferment Lactose in Milk and it will be safe for you to drink. Just keep the fermentation a bit longer to make sure all the lactose is fermented.

Awesome post! as for soy milk instead of milk, i really haven’t thought of that! but sounds interesting and worth a try!
I personally think any medium can be used to make kefir from kefir grains as long as you feed the kefir grains what they eat. Milk kefir grains eat lactose while water kefir grains eat fructose and glucose if i’m not mistaken.
As long as they have their food, and the environment is suitable, albeit not acidic enough to kill them, they should be fine. Healthy kefir grains are hardy little critters.

In theory, milk kefir will be entirely lactose-free (carb-free) if allowed to ferment for a sufficiently long period. I suspect that if allowed to ferment for 3 days, then 99% of the lactose will have been consumed by the kefir grains. As such, lactose-free kefir should be 99% safe on a candida diet.
I’m still experimenting with coconut milk kefir, but I suspect that the caprylic acid in the coconut milk will impair a majority of the kefir’s probiotic qualities. But I’m not certain.

I read that somebody bought kefir in store, then mixed it with milk and that is how he got kefir grains. Later I also read on other site the following statement:
”I’ve not used kefir starter as it only has 7 microbials and REAL kefir grains have 56+ beneficial microbials.”
So from what I understand, kefir that is made first time from kefir will only have 7 microbials, but if I make grains from kefir and then kefir, this would be the same as if I made kefir from grains? I just don’t understand that. And any way how can you know if grains were made from kefir and not from grains? I know ...

As the subject line reads there is a MAJOR DIFFERENCE between store-bought kefir which is loaded with sugar and kefir produced at home with kefir grains.

Moreless have been wondering about your suggestion with Skim milk.
Over the last month I have been brewing my own Milk kefir from 1.5% Organic cow milk. Im not sure how much you know about kefir, but its contains HUGE amnounts of benificial bactaria.
It occured to me that If I was to take amy acifholus casules with a glass of the kefir milk befor emy meals, I would get the benifits of the good bactaria.
Do you feel that using Kefir could be an improvement on the use of Skim milk?

Most commercially produced kefir is produced from a culture starter mix. With a few exceptions, real kefir grains are not used in commercial kefir production. Count the number of organisms found in most commerically produced kefirs, less than a dozen!!! Compare that to the thirty or more beneficial organisms typically found in real kefir fermented from grains. And fermenting kefir from grains is easy and inexpensive.

There is only one kind of real kefir, the kind made with living milk grains. Anything made from a starter without living grains is just a weird enhanced type of buttermilk.
Yogurt is different from real kefir and is a warm culture. Kefir is a drinkable beverage and is a cool weather culture. If you want to make a ’kefir yogurt’ buy one of those powdered kefir starters (which don’t make a real kefir anyway) and try that.

as everything in the world there are good yeast that help your body and bad yeast the one that comes in kefir is the good yeast, don’t worry about it, I have been drinking for 2 months 1.5 litres of kefir per day and feeling better day by day. However the commercial kefir is not the right one you must try to get the real kefir grains, so that you can prepair kefir at home with not additional price other than the milk.
Conclusion: Kefir is the best probiotic and food you can put in your guts.

You can find a whole lot of incredible info about kefir at Dom’s kefir site - unfortunately I can’t tolerate dairy either and have to turn to water-kefir. I love the ”regular” kefir taste - well, just another thing I can’t eat... :)

Are you sure nothing you haven’t changed anything?
Like accidentally changed the milk? rinse the kefir grains? used metallic dinnerware?
Kefir grains can be a little fussy. And sometimes when they are moved out of their ”comfort zone” they go through a shock period or cycle, then after a while they adjust and return to normal.
How long has your kefir grains been acting like this?

if your going on vacation for a couple of weeks or so, what i do is take the kefir grains and put them in the fridge with fresh milk, this will slow them down so they dont eat the lactose as fast, then when you come home strain the grains, throw away the milk (when storing you dont have to use a lot of milk,as to not waste it) and put them in fresh milk and they will begin like normal. However.....if your gone for like a couple of months they will have to be rejuvenated. I bought kefir grains covered in organic milk yesterday. Soon as i got home, I happen to wash them in tap water and put them in a glass jar with coconut water. This is my first time making coconut kefir. Then the next day i realiezed that I might have killed the kefir critters. :(
Its day one and i do see some kefir grains floating to the top of jar.
How can i save the kefir criters? Do i need to buy new kefir grains?
