Congratulations on making it 7 days. It sounds like you really got some healing done, although from your other issues, you body probably would need more time to deal with those. Perhaps you could do some juicing/raw foods for a while and then attempt another water fast, or do raw foods/juicing on your work days and water fasting on your days off.
Anyway, I don't really know anything about reflux, but before I found out I had a gluten allergy, my belly area would bloat after eating anything with gluten in it. I realized that the same thing happens after eating dairy too and I have cut that out completely. I don't know if that's what you mean when you say that your belly "just keeps growing after I eat".
I don't know what your diet is like right now, but maybe you have a food sensitivity or allergy that is still causing you issues.
Also, I don't know if you have ever done any liver flushing, but this has been hugely beneficial to me. My lingering bronchial asthma improved dramatically recently afterward and I was some how able to ward off my boyfriend's killer flu he had for 4 days soon after doing my flush.
I haven't done them in a while but my allergies have always improved after doing a flush.
You could combine the raw food/juicing and liver flushing, and add in an elimination diet if necessary and then maybe do another fast again.
These are just my thoughts and some of the stuff I might try if I had the same issues, particularly since the rash you mention sounds like your body is still trying to get rid of some stuff.
