Candida creates and thrives in an alkaline gut environment, while normal human bowel flora keeps pH bowel environment in the optimum acidic range (ACIDophilus). The Alkaline/Acid value of foods has to do with their pH/mineral content as residual ash.
So for example lemon is a very acidic food as it is, but due to mineral content, when nutrients are fully digested and dissolved, it's minerals help maintain blood pH balance in the slightly alkaline range. Every tissue/organ as an optimal pH which can range from acidic to alkaline.
