First of all, it is fantastic that you are going raw and focusing on healing. Me, too---I can totally relate to your blog as I have a good deal of weight to lose as well (70 pounds). So we'll do it together!!!

I have read that the craving for cheese is about water cravings (cheese is 70% water) and salt cravings. Drinking lots of water helped me get off of all dairy.

Salt cravings are about mineral cravings, so I use Pink Himalayan Salt which has something like 85 minerals.

Here is what can be done to replace lost cheese when switching to raw:

Make vegan cheese from sprouting ..... I sprout garbanzo seeds until they are about 1/2" long, both soaking and rinsing them with my Ocean Solution water (which gives them full mineralization). When they are "done" I thank them, and then whirl them in the blender (VitaMix) with a bit of water. Then I spread the puree in a glass baking dish and sprinkle jarrow's probiotics (available in fridge section of good health food store) --- here's a link: http://www.jarrow.com/product.php?prodid=227

and within one day, voila ... cultured hummus that you can mix with other things ... garlic, lemon, tahini etc.... you can also make from a base of zucchini.

Seeds and nuts can be used, but the sprouts and veggie ones are better for weight loss.

The best nut cheese I ever made was from a combo of macadamias and brazil nuts ..... WOW! Incredible! This will be loose looking like ricotta cheese ..... easier to digest that way. But, again, not good for weight loss, but at least it is highly digestible and loaded with the good flora our candida-ridden systems need to re-balance and heal.
