As a matter of fact, I did use shitake in this batch of stock that I made yesterday as portabella were not available locally. I haven't tasted it yet as I am still cleansing, but boy did it smell heavenly when it was simmering yesterday. I'm a fan of all types of mushrooms. Thery're an excellent yang food (yin/yang).
