I've gotta lot of food sensitivities as well as candida problems.

I'm looking for a recipe for zucchini bread that is wheat-free, gluten free, sugar-free, barley-free, corn-free, egg-free, milk-free, soy-free, yeast-free and free from all artificial colorings, flavorings, etc etc. and no nuts! yech! I like nuts but can't stand them in baked goods.

think I'll find one?

I can eat rice, potato, rye, or quinoa flour
I use olive oil instead of eggs
I use rice milk instead of cow's milk
I'm ok with organic butter in small amounts
baking powder is ok
salt is ok, as are spices
I've got the 4 lb. zucchini!

What can be used for sweetener? any safe baking alternatives out there? I've heard of stevia but don't know if it can be baked.

can't use honey, either. The problem with me and sugar or honey is it's too concentrated a sweetener and sends my blood sugar soaring, only to crash an hour later. plus it feeds the candida that is lying there, somewhat dormant, in my gut but just waiting for those carbs to come down the ol' gullet to wake them up again!

I can eat raisins--wonder if I grind them up? I can eat grape juice diluted or apple juice--use instead of water? carrots are sweet, too

anyone know how to convert a "standard" zucchini bread recipe to use non-standard ingredients? how to convert wheat flour to rice/potato flour, say? is it the same amount? how to use raisins/carrots/juices instead of sugar/honey?

any suggestions appreciated!
