Photos: we started with soaked nuts and seeds and ended with a deliciously healthy dinner!
(I wish I could format these pictures nicely, but I haven't figured
out the coding for curezone blogs. I apologize for the blank
spaces that appear). Chef Felicia made those "burgers" again! This
time she made adjustments to the recipe and the dehydration time based
on our experiences from the first time she made them. While those first
burgers were good, I think the minor changes she made this time around
has improved them. And she didn't even crack open the recipe book.
First, she soaked the sunflower seeds, pecans and almonds
overnight, and then today added soaked black beans, herbs and spices.
She used berbere- an African spice blend I made with our collection of
whole spices. (I was so glad she left out the Bragg's this time- it's
strong flavoring simply isn't necessary). She shaped the patties
differently- more like traditional burgers. She also adjusted the
dehydration time so that they were just the right "doneness" on the
inside and out- hard enough on the outside to hold the patty shape, but
soft enough to make them very palatable, not dry or chewy.
The
burgers looked awesome because she didn't try to completely pulverize
the nuts and seeds this time. The burger picture on the left shows the
patty before dehydration. The one on the right shows it afterwards.
We had the burgers on hemp bread with lettuce, tomato and avocado
slices, and had a little salad on the side. I think that as far as nut
burgers go, these were rather attractive! Naturally, they
had a bit of texture upon biting into them because of the larger-sized
nut and seed pieces, and I must say I prefer this over the smoother
mixture she made last week. Texture makes a meal much more interesting.
The addition of the black beans made the burgers more
attractive-looking as well.
I plan to have one burger every day at school this week- something nice to look forward to that will keep me satisfied all day!

WOW they look really tasty and I´d love to try them out. But need to ask a few questions, please... Why is it necessary to soak the nuts? In one of the blogs I read that this makes them easier to digest... is that the reason? Because I thought with raw food and all the preserved enzymes that don´t get cooked away, the body would have no problems with digestion - there must be another reason, or I have it mixed up!!! Anyways I´d like to get around soaking the nuts, if possible! Also what kind of black beans were used - I know these HAVE to be soaked for digestions-sake ? How long do they need to be soaked for? THANKS for answering!

Hi, I thought I'd jump in here and answer you about the soaking of nuts and seeds...
even though Julian (of "Raw", the uncook book) says he does it to be able to blend
them to a creamier texture, there's a far more important reason-- and I'm kind of surprised he doesn't mention it, but I guess to be fair, he DOES say he eats raw simply because he likes it...so I guess he leaves the science of it to others.
The reason for soaking is that nuts and seeds all have enzyme inhibitors...so, while raw vegetbles and fruits are really good to eat, and come with their own enzymes available, the nuts and seeds are 'protecting' themselves from being eaten, because their whole M.O. is to grow!
So, these inhibitors stop them from just growing any old place, until they find conditions right for sprouting. These conditions require soaking, and rinsing of the inhibitors.
Almonds especially have a rather bitter element in their skins, which you will notice, if you soak them for several hours and taste the soaking water.
Throw the soaking water away, peel an almond that has saoked and sprouted, and it is
a whole different creature...live and delicious.

YES I´ll second that - THANKS for the info. - now it makes more sense and will certainly soak nuts & seeds in future.
About the black beans - still trying to figure out what they look like, there are sooo many types of beans around, and I find it confusing. Are they like the azuki beans? Thanks again for any info. re the black beans - heard they´re very nutricious and by fermenting them (? don´t know how this would be done - maybe by soaking as well) they´re easier to digest and the body would not produce gas during the digestion process....

Black beans are...black beans! AKA turtle beans. They are different from the adzuki beans you mention, and also not to be confused with soybeans, which are also black. They are indeed very healthy -although if you are sensitive to "purine" you have to be careful). I don't know about fermenting them. Most fermented black beans I've read about seem to really be fermented soybeans, so you really have to read the packaging.

I've been eating black beans everyday.
I cook a cup of dry black beans.
I've soaked them before but I'm weary of the anthocyanins going in the water I use to soak the beans and throwing it out.
I don't get gas from black beans, they seem to be fine.
I heard cooking them with seaweed helps.
I haven't tried that.
Anyway, I have bowel movements daily now, that's rare for me.
My intestines just feel clean.
I have loads of energy.
I found out recently I'm vitamin d deficient and couldn't get out of bed most days and now I have lots of energy so yes black beans are amazing.!
